Salmon Quinoa Wilted Spinach Salad

Ingredients

  • 4 oz salmon loin (seasoned and baked)
  • 1 tsp olive oil
  • 1 cup cooked quinoa
  • ½ cup blistered cherry tomatoes
  • 1 cup fresh spinach leaves (wilted)
  • 1 Lemon Wedge (roasted)
  • 1 Balsamic Glaze to Garnish

Directions

  • To assemble the dish, spoon the cooked quinoa onto a plate or serving dish. Top with the blistered cherry tomatoes and wilted spinach.
  • Place the baked salmon loin on top of the quinoa and vegetables.
  • Garnish with a roasted lemon wedge for added flavor and presentation.

Walnuts, Parsley & Lemon Zest

Ingredients

  • 16 oz (1 box) fettuccine noodles
  • 1 cauliflower crown cut into bite size pieces, tossed in olive oil, garlic powder salt, & pepper

Sauce:

  • 2 tbsp olive oil
  • 1\4 cup flour
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • Salt & Pepper to taste

Toasted Walnuts:

  • 1 cup walnuts
  • 2 tbsp honey
  • 1 pinch nutmeg
  • 1 lemon to zest
  • Parsley garnish (optional)
  • 1 lemon to zest

Directions

  • In a large mixing bowl, combine the cooked fettucine, roasted cauliflower, toasted walnuts, and chopped parsley.
  • Drizzle with the remaining tablespoon of olive oil and squeeze the juice of half the lemon over the mixture.
  • Toss everything together gently to combine, adding a splash of the reserved pasta cooking water if needed to loosen the pasta.

Fish Cakes with Spring Mix Salad

Ingredients

  • 4 cups cooked flaked fish (salmon, trout, basa, tilapia)
  • 2 cups mashed potato
  • 2 Eggs
  • 1 tbsp Fresh chopped dill
  • 1 tbsp Fresh chopped parsley
  • 1 tbsp Dijon mustard
  • Juice of one lemon
  • Salt and pepper to taste

Directions

  • Mix all ingredients together.
  • Form into eight equal patties then fry in a nonstick fry pan with a little olive oil until golden brown.
  • Serve with spring mix salad and your favorite dressing.

Gluten Free Air Fryer/Oven Teriyaki Cod Bowl

Ingredients

  • 1.5 lb fish cubed – cod is great because it is firmer than others
  • 2 eggs
  • 3/4 cup Gluten Free flour
  • 1 tbsp Old Bay
  • 1 tsp garlic powder
  • 1/4 tsp salt + extra to sprinkle directly on fish
  • 1/4 tsp pepper + extra to sprinkle directly on fish
  • Olive oil spray

Directions

  • Cube deboned fish into bite size pieces. Lightly sprinkle pieces with salt and pepper. (You can coat using a bagged fish breading mixture if you want or mix flour and seasonings together.)
  • In a shallow bowl mix together flour, salt, pepper, Old Bay and garlic powder.
  • In another bowl whisk eggs.
  • One at a time coat fish piece in flour mixture, then dip and coat with egg (allow excess to drip off), and then coat again with flour mixture.
  • Preheat air fryer to 380 degrees F for 5 minutes. Spray basket with olive oil spray and put coated pieces inside in one layer without overlapping. Spray top of fish bites with olive oil spray so flour is moist.
  • Close basket once full and cook for 8 minutes total. Flip pieces over after minute 4 and spray olive oil spray on top of pieces again.
  • Served Over Saffron Steamed Rice and Stir Fried Zucchini Noodles
